Ingredients for two people:
1 can of Solky octopus in olive oil (about 350 g)
200 g cherry tomatoes
10-12 pitted black olives
1 tablespoon desalinated capers
2 medium potatoes
1 garlic clove
Extra virgin olive oil, to taste
Salt and pepper, to taste
Fresh parsley, to taste
Preparation:
Prepare the potatoes: boil the potatoes in salted water until tender, then peel and cut into cubes.
Sauté the garlic: in a pan, sauté the garlic with a drizzle of olive oil. Add the cherry tomatoes cut in half and cook for 5-7 minutes, until softened.
Add the octopus and other ingredients: drain the octopus and add it to the pan with the tomatoes. Add the olives, capers, and cubed potatoes. Cook for another 5 minutes, stirring gently to combine the flavors.
Season with salt and pepper: to taste and serve hot, garnished with chopped fresh parsley.
