A rich and flavorful dish that combines the tenderness of octopus with the creaminess of potatoes, enhanced by the bold flavors of olives, capers, and cherry tomatoes. Ideal for those seeking a tasty and well-balanced meal.



Recipe of octopus with tomato, olives, capers, and potatoes.


Ingredients for two people:

  • 1 can of Solky octopus in olive oil (about 350 g)


  • 200 g cherry tomatoes


  • 10-12 pitted black olives


  • 1 tablespoon desalinated capers


  • 2 medium potatoes


  • 1 garlic clove


  • Extra virgin olive oil, to taste


  • Salt and pepper, to taste


  • Fresh parsley, to taste


Preparation:

  1. Prepare the potatoes: boil the potatoes in salted water until tender, then peel and cut into cubes.


  2. Sauté the garlic: in a pan, sauté the garlic with a drizzle of olive oil. Add the cherry tomatoes cut in half and cook for 5-7 minutes, until softened.


  3. Add the octopus and other ingredients: drain the octopus and add it to the pan with the tomatoes. Add the olives, capers, and cubed potatoes. Cook for another 5 minutes, stirring gently to combine the flavors.


  4. Season with salt and pepper: to taste and serve hot, garnished with chopped fresh parsley.
