Ingredients for two people:
300–350 g of Solky bluefin tuna dark in oil
3 medium potatoes
1 large red or white onion Extra virgin olive oil, to taste Salt and pepper, to taste Fresh parsley or rosemary (optional, for garnish)
Preparation:
Prepare the potatoes: peel the potatoes and cut them into thin slices. Boil them in salted water for 5–6 minutes until just tender. Drain and set aside.
Slice the onion: peel and thinly slice the onion.
Sauté the onion: in a large pan, heat a drizzle of olive oil and cook the onion over low heat until soft and slightly caramelized.
Add the potatoes: add the boiled potato slices to the pan. Let them cook for a few minutes, gently turning them until golden on both sides.
Add the Tuna Dark: drain the tuna dark and add it to the pan, breaking it up slightly. Cook for 2–3 minutes, just enough to warm it and blend the flavors.
Season and serve: adjust salt and pepper to taste. Garnish with fresh parsley or a few rosemary leaves, if desired. Serve warm.
