A fresh and light salad where the delicacy of octopus meets the creaminess of avocado, the crunch of cucumber, and the fragrance of lemon.
Solky Octopus Salad with Avocado and Cucumber
Ingredients for two people:
1 can of Solky octopus in olive oil (350 g)
1 ripe avocado
1 cucumber
1 tablespoon of extra virgin olive oil
Juice of 1 lemon
Salt and pepper to taste
Preparation:
Drain the octopus and cut it into slices.
Peel and dice the avocado, then thinly slice the cucumber.
In a bowl, combine the octopus, avocado, and cucumber.
Dress with lemon juice, olive oil, salt, and pepper.
Garnish with fresh mint leaves and serve immediately.
